🛒 Ingredients (Spinach Filling)

  • 2 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 3–4 green onions, chopped
  • 3 cloves garlic, minced
  • 1 lb (450g) fresh spinach, chopped (or 10 oz frozen, thawed & drained)
  • ¼ cup fresh dill, chopped (or 1 tbsp dried)
  • ¼ cup fresh parsley, chopped
  • ¼ tsp nutmeg (optional)
  • Salt & pepper to taste
  • 2 large eggs, lightly beaten
  • 1½ cups crumbled feta cheese 🧀
  • ½ cup ricotta or cottage cheese (optional)

🥐 For the Phyllo Crust

  • 1 package phyllo dough (thawed)
  • ½ cup melted butter or olive oil
