Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts, pounded to even thickness
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter for searing
  • 1 teaspoon garlic powder (optional)

For the Mushroom Sauce:

  • 2 cups sliced mushrooms (button or cremini)
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream or half-and-half
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • Salt and pepper to taste

For the Buttered Noodles:

  • 8 oz egg noodles (or your preferred pasta)
  • 2 tablespoons butter
  • Salt to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Prepare the Chicken: Season chicken breasts with salt, pepper, and garlic powder. Heat olive oil or butter in a large skillet over medium heat. Sear chicken for 4–5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  2. Cook the Noodles: Bring a pot of salted water to a boil. Cook egg noodles according to package instructions until al dente. Drain and toss with butter. Set aside and keep warm.
  3. Make the Mushroom Sauce: In the same skillet used for chicken, melt 2 tablespoons of butter. Add sliced mushrooms and cook for 4–5 minutes until softened. Add garlic and cook for 1 minute. Pour in chicken broth and bring to a simmer. Stir in cream and thyme, and season with salt and pepper. Simmer until sauce thickens slightly.
  4. Combine: Return the cooked chicken to the skillet, spooning some sauce over the top. Let it simmer for 2–3 minutes to absorb the flavors.
  5. Serve: Plate the buttered noodles and top with the chicken and mushroom sauce. Garnish with chopped parsley for color and freshness.
