- 3 to 4 lb boneless pork shoulder or pork loin (trimmed)
- 1/2 cup honey
- 1/2 cup Dijon mustard (or yellow mustard for milder flavor)
- 1 1/2 to 2 teaspoons kosher salt

1. Prep the pork
Pat the pork roast dry with paper towels and place it directly into your slow cooker.
2. Mix the sauce
In a small bowl, whisk together:
- honey
- mustard
- salt
Mix until smooth and glossy. Taste and adjust slightly if needed — it should be sweet, tangy, and lightly salty.
3. Coat the roast
Pour the sauce evenly over the pork. Turn the roast once or twice so it’s fully coated. Place it fat side up if possible — this helps keep it juicy as it cooks.
4. Slow cook to perfection
Cover and cook:
- LOW: 7 to 9 hours
- HIGH: 3½ to 4½ hours

5. Rest and shred/slice
Remove the pork and let it rest for about 10 minutes. Then slice or shred depending on your preference.
