Coconut Lime Fish Soup

A light, fragrant, and healthy soup with tender white fish, creamy coconut milk, and zesty lime. Perfect for a quick weeknight dinner!

Ingredients

  • 500 g fresh white fish (cod, tilapia, or similar), cut into bite-sized pieces

  • 400 ml coconut milk

  • Juice and zest of 2 limes

  • 3 cloves garlic, finely chopped

  • 2 cm piece of ginger, grated

  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 1 red chili pepper, finely chopped (optional)

  • 1 tsp ground cumin

  • ½ tsp turmeric powder

  • Salt and pepper, to taste

  • Fresh coriander (cilantro), for garnish
