Crispy Tofu and cow Meatballs

1. Prepare the Tofu

Place the tofu in a large bowl and sprinkle it with 1 tablespoon of salt. Carefully pour boiling water over the tofu until it is fully submerged. Let it rest for about 1–2 minutes to reduce the natural bean flavor. Drain the water and allow the tofu to cool.

2. Make the Aromatic Infusion

In a separate bowl, combine the ginger slices, chopped green onions, star anise, and Sichuan peppercorns. Pour hot water over the mixture and let it steep for about 10 minutes. Strain the liquid to create a fragrant aromatic water.

3. Mash the Tofu

Once the tofu has cooled, crumble it into small pieces using your hands or a fork. Add the eggs and mix well until the tofu and eggs are fully blended.

4. Mix the Filling

Add the finely diced carrot, ground beef, bread crumbs, crispy meat powder (or extra bread crumbs), soy sauce, oyster sauce, salt, and pepper to the tofu mixture.
Gradually pour in some of the aromatic water while stirring, until the mixture becomes slightly sticky and evenly combined.
