The 3-Ingredient Pudding You Never Knew You Needed

There’s something almost nostalgic about chocolate pudding. For many of us, it started as a simple boxed dessert—quick, familiar, and comforting. But somehow, it always felt like something was missing. Not quite rich enough, not quite intense enough, especially if you were expecting that deep, luxurious chocolate flavor you imagine in a real dessert.

That all changes when you discover a completely different version of pudding—one that’s closer to a silky chocolate mousse than anything from a box. It’s rich, intense, and made with surprisingly simple ingredients. The real secret? It strips everything down to the essentials and lets chocolate take center stage.

This recipe was inspired by a restaurant-style dessert experience where the focus was pure chocolate flavor, not fillers. The idea is simple: use high-quality dark chocolate, keep the ingredients minimal, and avoid anything that dulls the richness. No heavy cream, no milk—just chocolate, water, and a touch of sweetness or liqueur for depth.

🍫 INGREDIENTS

🍫 For the Chocolate Pudding

9.5 oz (270 g) 70% dark chocolate, finely chopped

🔥 Step 2: Melt the Chocolate

In a saucepan, combine the chopped chocolate, water, amaretto (if using), and sugar. Heat over medium heat while stirring constantly. The chocolate will slowly melt into a smooth, glossy mixture. Once almost fully melted, remove from heat and continue stirring until completely smooth.

🍫 Step 3: Whisk to Thicken
