Ingredients

  • 6 large eggs

  • 1 small onion, finely chopped

  • 1 small carrot, finely chopped

  • ½ cup sweetcorn

  • 1 green chili, finely chopped (optional)

  • Optional vegetables: bell peppers, broccoli florets, cherry tomatoes

  • 2 tablespoons chopped coriander (or parsley/chives)

  • ½ cup shredded mozzarella (or cheddar/any preferred cheese)

  • Salt and black pepper to taste


Step-by-Step Instructions

1. Preheat & Prepare

Preheat your oven to 350°F (175°C).
Grease a muffin tin with non-stick spray or line it with paper liners to prevent sticking.

2. Whisk the Eggs

Crack the eggs into a large mixing bowl and whisk thoroughly until smooth. Beating the eggs well helps create a light and fluffy texture.

3. Add the Vegetables

Stir in the chopped onion, carrot, sweetcorn, green chili (if using), and any additional vegetables.
Make sure the veggies are finely chopped so they cook evenly and blend well into the egg mixture.

4. Season the Mixture

Add salt and black pepper to taste. You can also include a pinch of paprika, oregano, or mild spices for extra flavor.

5. Fold in the Cheese

Gently mix in the shredded cheese. This adds creaminess, flavor, and helps bind everything together during baking.

6. Fill the Muffin Tin

Spoon the mixture into the muffin cups, filling each about ¾ full.
Optional: Sprinkle a little extra cheese on top for a golden, cheesy finish.

7. Bake

Bake for 15–20 minutes, or until the muffins are firm and lightly golden on top.
Insert a toothpick in the center—if it comes out clean, they’re ready.

Let them cool for a few minutes before removing from the tin.
