  • Use oven mitts — ramekins will be hot.

  • Let sit for about 30–60 seconds.

  • Release the eggs

    • Gently loosen edges with a rubber spatula.

    • If needed, run a knife carefully around the sides.

    • Lift out and transfer to a plate or toast.

  • Season & serve
    Add salt and pepper to taste and enjoy immediately.
